This dish is a great way to add a flavor punch to your meal while staying healthy. ## Recipe & Instruction #### Ingredients - 1 package firm tofu - 2 tablespoons olive oil - Salt and pepper, to taste - 1 pint cherry tomatoes - 2 tablespoons balsamic vinegar - 2 tablespoons chopped fresh basil #### Directions 1. Preheat oven to 400°F. 2. Drain the tofu and press it between two plates or between paper towels to remove as much liquid as possible. Cut the tofu into 1/2-inch cubes. 3. Place the tofu cubes on a baking sheet, and drizzle with 2 tablespoons of olive oil. Sprinkle with salt and pepper. 4. Bake for 15-20 minutes, or until the tofu cubes are lightly browned and crispy. 5. Meanwhile, halve the cherry tomatoes and place them in a medium bowl. Add 2 tablespoons of balsamic vinegar, 2 tablespoons of chopped fresh basil, and a pinch of salt and pepper. 6. Gently stir to combine. 7. Once the tofu cubes are done baking, add them to the bowl of tomatoes. Gently stir to combine. 8. Serve the Crispy Tofu with Balsamic Tomatoes warm, over a bed of your favorite grain. Enjoy!
