Sancocho De Habichuela Dominicano

Ingredients

  • 3 pounds of beef, cut into cubes

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes, garlic, oregano, and tomato paste. Cook for 5 minutes, stirring often.
  2. Add the red wine vinegar, onion, bell peppers, beef broth, Worcestershire sauce, adobo seasoning, cumin, and smoked paprika. Bring to a boil and reduce the heat to low. Simmer for 45 minutes.
  3. Add the red kidney beans, sweet corn, cabbage, potato, and carrots. Simmer for an additional 30 minutes, or until the beef is tender.
  4. Season with salt and pepper, to taste. Serve hot.
