Ensalada Colombiana De Remolacha

Ensalada Colombiana De Remolacha

Ingredients:

  • 3 medium beets
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions:

Step 1: Roast the Beets

  • Preheat oven to 375F.
  • Wash the beets and wrap them in a foil packet. Place packet on a baking sheet and roast in oven for 40-50 minutes, until beets are tender.
  • Remove from oven and let cool.

Step 2: Prepare the Salad

  • Peel and dice beets, and place in a large bowl.
  • Add diced bell pepper and onion, and chopped parsley.
  • Mix together until combined.

Step 3: Make the Dressing

  • In a small bowl, whisk together olive oil, vinegar, cumin, salt and pepper.
  • Pour dressing over the salad and mix until combined.

Step 4: Serve

  • Serve the ensalada colombiana de remolacha immediately, or chill in the refrigerator for up to three days.
