Ensalada Colombiana De Remolacha
Ingredients:
- 3 medium beets
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons white vinegar
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions:
Step 1: Roast the Beets
- Preheat oven to 375F.
- Wash the beets and wrap them in a foil packet. Place packet on a baking sheet and roast in oven for 40-50 minutes, until beets are tender.
- Remove from oven and let cool.
Step 2: Prepare the Salad
- Peel and dice beets, and place in a large bowl.
- Add diced bell pepper and onion, and chopped parsley.
- Mix together until combined.
Step 3: Make the Dressing
- In a small bowl, whisk together olive oil, vinegar, cumin, salt and pepper.
- Pour dressing over the salad and mix until combined.
Step 4: Serve
