Ingredients for Chicken à La Grande:
4 boneless, skinless chicken breasts
3 tablespoons butter
1/4 cup shallots, diced
1/2 cup white wine
1/2 cup heavy cream
1/4 cup Parmesan cheese, grated
1/4 teaspoon nutmeg
1/2 teaspoon fresh thyme, chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
Instructions:
Step 1: Prepare the Chicken
Using a sharp knife, slice the chicken breasts in half lengthwise so that each breast is now in two thin cutlets. Season each side with salt and pepper.
Step 2: Cook the Chicken
Heat a large skillet over medium-high heat and melt the butter. Add the chicken cutlets to the pan and cook for 3-4 minutes per side, or until golden brown and cooked through. Once cooked, transfer to a plate and set aside.
Step 3: Make the Sauce
Lower the heat to medium and add the diced shallots to the pan. Cook for 2-3 minutes, stirring occasionally, until softened. Add the white wine and cook for an additional 2 minutes, stirring occasionally.
Step 4: Finish the Sauce
Add the heavy cream, Parmesan cheese, nutmeg, thyme, salt and pepper to the pan and stir to combine. Bring to a low simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
Step 5: Assemble the Dish
Return the chicken to the pan and spoon the sauce over the chicken. Serve warm over your favorite side dish. Enjoy!
