# Chickpea Powered Mediterranean Couscous ## Ingredient - 1 tablespoon olive oil - 1/2 cup diced red onion - 2 cloves garlic, minced - 1/2 teaspoon ground cumin - 2 cups vegetable broth - 1 cup uncooked couscous - 1 (15-ounce) can chickpeas, drained and rinsed - 1/2 cup diced red bell pepper - 1/2 cup diced cucumber - 1/2 cup diced tomatoes - 2 tablespoons chopped fresh parsley - 2 tablespoons crumbled feta cheese - Salt and pepper to taste ## Instruction 1.
