Buche De Noel Yule Log Cake Recipe

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 3/4 cup sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup water
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Instructions

Cake

  1. Preheat oven to 375°F (190°C). Grease a 10x15-inch jelly roll pan and line with parchment paper.
  2. In a medium bowl, whisk together the eggs and sugar until light and fluffy.
  3. In a separate bowl, sift together the flour, baking powder and salt.
  4. Gradually add the flour mixture to the egg mixture, stirring until just combined.
  5. Stir in the water, melted butter, vanilla, and almond extract.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 12 to 15 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let cool for 10 minutes.
  9. Using the parchment paper, carefully roll up the cake into a log, starting at the short end.
  10. Set aside until ready to assemble.

Frosting

  1. In a medium bowl, cream together the butter and cream cheese until light and fluffy.
  2. Gradually add the powdered sugar and mix until smooth.
  3. Stir in the vanilla extract and almond extract.

Assembly

  1. Unroll the cake log and spread the frosting evenly over the cake.
  2. Reroll the cake and place onto a serving platter.
  3. Using a serrated knife, trim off the ends of the cake log to make it look like a real Yule log.
  4. Decorate with chocolate shavings, powdered sugar, and/or holly leaves.
  5. Serve and enjoy!
Tips
  • This cake can be made a day ahead of time and stored in the refrigerator until ready to serve.
  • This cake can be served with a dollop of whipped cream or a scoop of ice cream.
